Sugar


Sugar is a sweet crystalline substance obtained especially from two main  source, the root of the sugar beet or the  stem of the sugar cane plant.  Sugar beet is beet of a variety plant with fleshy root, cultivated as food from which sugar is extracted. Sugar cane is a tropical grass with tall stout stems from which sugar is extracted also. Brown and white sugar determined by the extent of processing after extractions.  In Biochemistry sugar is any of soluble crystalline sweet-tasting carbohydrates including Glucose, sucrose and fructose.

  1. Molasses is thick and brown liquid containing sugar extracted from sugar cane.

  2. Muscovado, unrefined sugar made from sugar cane containing between 6 and 13 % molasses and coarse. Usually adds a chrunchy texture to food.

  3. Golden Caster is a raw, free-flowing cane sugar that dissolves quickly and has a light presence of molasse. It use to add flavour to fruit or sweet sauces.


Gula Melaka is dark dense and sticky palm sugar usually used in Asian deserts. There is also artificial sweeteners which provide sugarlike taste but minus calories.
